Nestled in the heart of New Hampshire’s postcard‑worthy landscape, Cathedral Ledge Distillery is more than just a place to sip and swirl. For someone who’s no stranger to the nuances of alcohol, this experience was a delightful surprise: affordable, educational, and rich with local character.


Though the distillery is a relatively new addition to the region, it feels like it’s been part of the community’s fabric for generations. Situated just a quick three‑mile drive south of North Conway’s village centre, a small mountain town in New Hampshire’s Mt. Washington Valley, the building itself exudes old‑world charm, a rustic elegance that tells its own story. Think weathered wood, soft lighting and the faint hum of heritage: a love letter to traditional craftsmanship with just the right touch of modern finesse.


It’s a place where the past and present dance in harmony. You can feel it in the exposed beams, the repurposed materials, and the gleam of polished copper stills. Even the air feels special, sweet, earthy and warm with the scent of fermenting grain, oak barrels and just a hint of juniper and spice floating on the breeze. It’s the kind of smell that tells you something magical is brewing.


The Tasting Room


Stepping into the tasting room, you’re instantly wrapped in the comforting embrace of wood, warmth, and welcoming smiles. The room is cozy but elegant, lined with barrels and decorated with vintage-inspired pieces that make you feel like you’ve stepped into a living postcard.


I came with my good friend Shaznae. She's just as drawn to hidden corners and secret nooks (I like to think I’m the curious spark in her wanderlust). Tasting began with a warm greeting and a quick overview of the distillery’s ethos, organic ingredients, local sourcing, and a deep respect for the craft. I tried a flight that included their blueberry-infused vodka, rye whiskey, wheated bourbon, and gin, every sip was a story.


The blueberry vodka was a revelation. Not too sweet, not too sharp, it struck that perfect balance where the berry’s natural flavour danced across the palate without overwhelming the spirit. It tasted like summer in a glass.


The rye whiskey had a bold, spicy kick that lingers, while the wheated bourbon was smooth, rich, and beautifully nuanced. It had soft vanilla notes, a little caramel, and a silky finish that made me rethink what I thought I knew about bourbon.


The gin? A botanical dream. Bright, refreshing and layered with aromatics that transported me straight into an alpine forest. For gin lovers, it’s a must-try.





The Art of Distilling


While Cathedral Ledge passionately highlights its small‑batch, additive‑free distilling, natural yeast fermentations, copper pot stills and no flavour‑altering fining agents, our tour guide Karen the assistant distiller, did note that some of their grain suppliers still rely on pesticides and synthetic fertilizers in the fields. Traditional large‑scale distilleries often lean heavily on chemical inputs and rapid‑fermentation techniques to guarantee consistency and volume.


Cathedral Ledge, by contrast, limits those interventions in the distillation process itself, sourcing as many organic and local ingredients as possible and taking care to preserve each batch’s unique character. The result? Spirits that, if not perfectly “USDA‑certified organic” at every step, still deliver a cleaner, more nuanced expression of New Hampshire’s terroir than the uniform profiles of mass‑market brands.


The distillery's dedication to organic ingredients is not just a marketing ploy but a genuine philosophy. Each batch is a testament to their meticulous process, from the selection of grains to the final product. The blend of tradition and innovation in their distilling techniques results in spirits that are as sophisticated as they are authentic.

Karen, whose knowledge and enthusiasm added an extra layer of enjoyment to the experience. She guided us through the distillery with a passion that made the history and process come alive, enriching our understanding of the art behind each bottle.
